As usual there is never a dull moment at Black Star. From patrolling our fence lines chasing off hunters to random people showing up at our gates, its always something. The Suard Christmas Light display is almost done. We should be going online Dec. 1st. BFA preparations are in full swing. We are very excited to attend that event every year in Oklahoma City. Right after that is one of our other all time favorite shows, The Holiday Classic, in Jackson, Mississippi.
Black Star is proud to be a sponsor of both events.
It is that time of year to begin the great debate of who we plan on breeding. We are breeding our Stud "Famous Pie" aka "Cat Daddy" for the first time this year. We are incredibly excited to see what type of babies he produces. He is a wonderful addition to our Stallion program. He is incredibly good minded, built awesome and wicked fast.
Thanks to those people who recently purchased horses from The Black Star Ranch. We hope you are extremely happy with your new equine additions.

Pierre and Boudreaux found themselves out of a job when the underwear factory in Port Barre shut down. But their boss said they could go to the LSU office -- you know ... the Louisiana State Unemployment Office -- so that Pierre and Boudreaux could get some money from the State while out of a job. So Pierre and Boudreaux went to the LSU office. As Pierre waited, Boudreaux sat down at a desk and was interviewed by the lady there. "And what was your former occupation?" she asked. "Me, I was a crotch stitcher. I specialized in ladies underpants." Boudreaux proudly replied. So the lady looks it up in her big book and says, "OK, you're eligible for $50 a week." "You mean I don't gotta do nothin' and I kin get $50 a week. Man, dats betta den crawfishin'!" Boudreaux shouted. Then Pierre sat down and the lady asked him the same question. Pierre looked her straight in the eye and said, "I was one a dem diesel fitters." She looked up in her big book again and said "Very good then, you're eligible for $200 a week in unemployment benefits." "Wait a minute!" Boudreaux shouted. "Mais, how come Pierre gets $200 a week, and me, I only get $50. I tole you I used to be a crotch stitcher; you know you gotta be real good to do dat kind of work so de seams are all nice an straight an smooth so nutting scratches de lady. An Pierre here, he's only a diesel fitter. And he's gonna make at least twice more dan me?!" "Oh," the lady replied, "but he's a skilled laborer with an education. Diesel fitters are in high demand especially by oil fields and heavy equipment users. There's not many diesel specialists around." "Whoa, whoa, whoa, lady," Boudreaux continued, "you got dat all wrong. Yeah, Pierre's a diesel fitter, all right. But what dat means is dat after I do all de fine work on de lady drawers, he picks dem up, looks 'em over and stretches dem dis way and dat, and den says, 'Yep, dese'll fit her!'"
Recipe of the Week:
Baked Oysters in Shells

• 4 doz. large oysters
- • 4 slices bread
- • 1 tbsp. butter
- • 2 whole eggs
- • 1 tbsp. Worcestershire sauce
- • Celery, chopped
- • Parsley
- • Salt and pepper
- • Finely chopped lemon peel, if desired
Directions
Soak bread in strained oyster juice. Place butter in heated skillet, add chopped onions and bread which has been pressed dry with slotted spoon. Allow mixture to cook to consistency of dressing, adding chopped oysters, parsley, celery, salt and pepper. Finely chopped lemon peel may be added if desired. When mixture is cooked, let cool slightly, add Worcestershire sauce and two eggs. Mix thoroughly and fill oyster shells. Sprinkle over with bread or cracker crumbs and dot with butter. Bake in moderate oven until crumbs are golden brown. Top with lemon slices and sprig of parsley and Serve. - • Celery, chopped

The Black Star Ranch is a quarter horse performance ranch specializing in Barrel Racing, Breeding and Western Riding. Located in Houma, Louisiana, we are approximately 45 minutes from the New Orleans Airport.
Our facility has 3 barns totaling over 60 stalls. The Black Star Ranch has a covered arena measuring 120 x 220, an open arena measuring 140 x 250 with great footing in both. Round Pens, Wash Stalls, Priefert Electronic Walker, RV Hookups and plenty of parking.
Houma has a population of over 100,000 and has many great restaurants, shopping and tourist attractions. Our area prides itself on southern hospitality and great Cajun cuisine. Cajun Swamp & Alligator Tours, Airboat tours, Louisiana Plantations, Offshore and Inland fishing tours, Mardi Gras, great area Golf courses are just a few of our attractions.
Black Star is located approximately 1 hour from the world famous “City of New Orleans” which is a hop, skip and a jump from us. While visiting Black Star for your horse purchase, you can also tour Houma and New Orleans making us an ideal spot to visit while searching for your next equine partner.
